Davies was born in Romford, Essex. Alongside his motorsport activities he runs Sub-Zero Wolf, the UK and European distributor for Sub-Zero and Wolf luxury kitchen appliances. He is a supporter of the Haven House children's hospice charity.
Davies began karting in the UK 100 National A class from 1983 to 1985, returning to kart competition from 1997 to 1999. He moved into car racing from 1987, initially in saloon cars in domestic British club competition, accumulating fastest laps and podiums across Modified Production Saloon categories. He won the BARC championship overall in 1994 and the Falken Modified Production Saloon Championship in 1995. He also competed in saloon car racing with a Sierra RS500 Cosworth and a Seat SuperCopa.
In 2010 Davies founded SZ Motorsport and expanded into both contemporary endurance racing and historic events. Notable early results included a class win at Sebring in a Shelby Mustang in 2012 (SVRA Endurance, class first, second overall) and a win in the Britcar Production Cup at Donington Park in April 2012, sharing a Seat SuperCopa with Adam Jones. He also won the Silverstone Classic in July 2012 in the Sierra RS500.
From 2016 the ex-works Alan Mann Racing Mustang became the centrepiece of Davies's Masters programme. In 2016 he won the Masters Historic Pre-66 Touring Cars class at Brands Hatch, Silverstone, and Spa-Francorchamps in the same season — three consecutive wins in the series' most competitive pre-1966 touring car class. He took further Masters victories at Dijon in 2018. At the 2019 Goodwood Members Meeting he won the Pierpoint Cup, and at the 2019 Spa Six Hours Classic he won outright in the Alan Mann Mustang.
SZ Motorsport has competed at Goodwood Revival, Goodwood Members Meetings, the Paul Ricard Historic Masters, and Spa-Francorchamps, and has also raced in the United States and South Africa. The team's international reach across Europe, the Americas, and southern Africa reflects Davies's long-term ambition to run historic touring and sports car machinery at the highest level globally.
SZ Motorsport operates a fleet of significant period machinery: the ex-works Alan Mann Racing Mustang (first-generation), a Ford GT40 from the same Alan Mann stable, a Boss Mustang 302, and a Corvette Stingray. Davies has shared these cars with Derek Bell, Jason Plato, Robb Gravett, Oliver Gavin, and Henry Mann — son of the late team owner Alan Mann — who has driven the GT40 that SZ Motorsport now owns and operates. The GT40 has appeared in races where Davies's co-drivers from the Bell and Plato generations of British racing have contributed experience alongside Davies's own pace in the pre-1966 classes.
