Saucy's first season in single seaters came in 2016 in the V de V Challenge Monoplace, where he drove for RC Formula and later GSK Grand Prix. Three podiums, all second places at Circuit de Nevers Magny-Cours, placed him fourth in the championship.
He made guest appearances in Formula 4 from 2017 onward. Jenzer Motorsport fielded him in the Italian F4 Championship in 2017 for six races, during which he scored points twice at Mugello Circuit. In 2018 he raced as a Jenzer guest in ADAC Formula 4 and continued a further Italian F4 campaign, recording a double pole position at Monza and a fifth-place finish as his best result. He also switched to French team R-ace GP for the final Italian F4 round that year.
In 2019 Saucy contested the full ADAC Formula 4 season for R-ace GP, reaching the podium twice at Zandvoort and Sachsenring to finish ninth overall. He also drove for R-ace GP in selected Italian F4 rounds, his best finish being fourth at the Red Bull Ring.
Saucy made his Formula Renault Eurocup debut in 2017 with AVF by Adrián Vallés, competing in only the opening four rounds and recording a best finish of twelfth. He returned to the series in 2019 as a guest driver for R-ace GP for the final two rounds, taking fifth in his first race. In 2020 he joined ART Grand Prix alongside Paul Aron and Victor Martins, securing two podiums — third places at the Nürburgring and Spa-Francorchamps — to finish seventh in the standings.
He also competed in the 2020 Toyota Racing Series with Giles Motorsport at the start of that year, securing two second places and placing sixth overall.
For 2021 Saucy remained with ART Grand Prix in the Formula Regional European Championship by Alpine, the merged successor to the Formula Renault Eurocup and the Formula Regional European Championship. Racing alongside Gabriele Minì and Thomas ten Brinke, he dominated the campaign from the outset. He won the second race at Imola, then took a double victory in Barcelona. After a difficult Monaco round and a disqualification in France — caused by a part reassembled in the wrong direction after post-race scrutineering — he returned to winning form at Paul Ricard. Saucy then swept the Zandvoort weekend with two pole positions and two victories. A mixed Spa-Francorchamps qualifying left him 24th on the grid for the opening race, yet he recovered to eighth before claiming his seventh win of the season from pole in race two. He inherited an additional victory after a time penalty was applied to Franco Colapinto for track limit breaches.
Saucy clinched the title at the Mugello penultimate round with three races remaining after his closest rival Hadrien David finished 23rd while Saucy took fifth. He ended the season with eight victories, ten podiums, and 277 points.
In November 2021 Saucy tested with ART Grand Prix at the FIA Formula 3 post-season evaluation, alongside Victor Martins and Juan Manuel Correa. ART announced him as a race driver for 2022 shortly after. He qualified fourth on his debut and scored his first podium in the feature race at Sakhir. A collision with teammate Martins in the opening round resulted in a grid penalty. Oliver Bearman ended a probable third place in Imola on the final lap. Despite underlying pace throughout the year, results became inconsistent, and Saucy finished fifteenth in the standings behind both his teammates Martins and Correa.
He remained with ART for 2023, partnering Kaylen Frederick and Nikola Tsolov. A second-place finish in Melbourne marked him as a potential title contender, and another podium followed in the Monaco sprint race. However, a persistent run of misfortune — including a puncture while fighting for the lead in Austria after qualifying on pole — restricted him to fourteenth in the standings with 54 points, the highest-placed ART driver that year. He joined MP Motorsport for the final post-season test at Imola.
After two challenging FIA Formula 3 seasons, Saucy transitioned to endurance racing with United Autosports. In the 2024 FIA World Endurance Championship he competed in the LMGT3 class, scoring a fourth place at Spa-Francorchamps and consecutive fourths in São Paulo and Austin. His car retired from Le Mans after running in podium contention. The team finished ninth in the LMGT3 standings.
In parallel, Saucy joined Richard Mille by TDS in the European Le Mans Series LMP2 Pro-Am class with Mathias Beche and Rodrigo Sales. A Pro-Am podium in the Barcelona opener was followed by outright wins at Le Castellet and Mugello, and a pole at Spa-Francorchamps before a safety car restart error caused retirement. The team placed fourth in the LMP2 standings.
Saucy remained with United Autosports in the 2025 FIA World Endurance Championship LMGT3 class and in the European Le Mans Series LMP2 category, also contesting the Asian Le Mans Series at year's end. For 2026 he continued with United Autosports in the European Le Mans Series LMP2 category after the team withdrew from the FIA WEC to focus on a 2027 Hypercar programme, while also targeting selected IMSA SportsCar Championship rounds.
In May 2024 Saucy was selected by the NEOM McLaren Formula E Team to participate in the Berlin rookie test. In February 2026 he was announced as a member of the McLaren Driver Development Programme.
