Briché began car racing in 2001 in the Peugeot 206 RCC Cup France, winning the series the following year. After a season in the French Supertouring Championship, he was runner-up in the Peugeot RC Cup in 2004, then took his second Peugeot 206 RCC Cup title in 2005. In 2006 he made a surprise appearance at the 24 Hours of Le Mans for Gérard Welter's LMP2 outfit, alongside a one-off start in the Danish Touringcar Challenge.
In 2007 Briché founded JSB Compétition and competed in the Peugeot THP Spider Cup, finishing runner-up overall with four wins. He remained in the series in 2008, taking six wins in ten races and finishing third in points. Concurrently, he raced in the GT3 class of the FFSA GT Championship for First Racing, scoring five wins on his way to fourth in points.
Two full seasons with JSB Compétition in the FFSA GT Championship followed, highlighted by an outright win at Magny-Cours in 2010. That same year he raced in SEAT Leon Supercopa France, winning five times to claim the series title. In 2011 he switched to Porsche Carrera Cup France, scoring a lone win at Le Castellet to finish seventh in points. In 2012 he added a win at Lédenon and finished tenth in points, while also taking third in the Peugeot RCZ Racing Cup France.
After a part-time 2013 campaign split between the FFSA GT Championship and the Peugeot 208 Racing Cup France, Briché joined the SEAT León Eurocup in 2014, winning at Spa and Monza to finish third in points. He continued in the series for two more seasons, finishing fourth and fifth, and took a lone win at the Red Bull Ring in 2016.
In 2017 Briché moved to the Peugeot 308 Racing Cup, posting seven wins and four other podiums to clinch the title. He was runner-up the following year with five wins and four additional podiums.
Briché entered TCR Europe in 2018 alongside his Peugeot 308 campaign, taking his maiden series win at Spa to finish eleventh overall and third in the TCR BeNeLux sub-championship. In 2019 he opened the season with wins at the Hungaroring, Hockenheimring, and Spa, then added a Monza win at year's end to finish runner-up in the championship and claim the TCR BeNeLux title over Josh Files. He also finished second in the TCR Spa 500 for DG Sport Compétition and claimed his second Peugeot 308 Racing Cup title that year.
In 2020 the COVID-19 pandemic cancelled the TCR Asia Pacific Cup and TCR Australia rounds he was due to contest; returning for the remainder of the TCR Europe season, he won at Monza and scored two further podiums to finish tenth in points.
From 2021 Briché returned to sportscars, initially in the French GT4 Cup with an Aston Martin Vantage, then stepping up to the GT4 European Series in 2022 with an Alpine A110 and a Mercedes-AMG GT4, scoring a Pro-Am podium at Le Castellet. The team reverted to the Vantage for 2023, then switched to a Porsche Cayman for 2024, with which Briché took a Pro-Am win at Misano and three further podiums to finish fifth in points. In 2025 he returned to TCR Europe with a Hyundai Elantra N TCR, recording a best result of fourth in race two at the Hockenheimring and finishing 18th in points.
Briché's son Florian Briché is also a racing driver; the two raced together in TCR Europe and the GT4 European Series.
