Sarrazin won the French Formula Renault Championship in 1994, launching a progression through the single-seater ranks. He competed in International Formula 3000 during 1999, winning a race at the Hungaroring.
In the 1999 season Sarrazin made his only Formula One start, substituting for Luca Badoer at Minardi in the Brazilian Grand Prix after Badoer injured his wrist. He suffered a spin on lap 31 approaching the start-finish straight and scored no championship points. He also carried out testing duties for Prost Grand Prix during the 1999–2001 seasons and for Toyota Racing during their debut 2002 campaign.
Sarrazin's most sustained success came in sportscar and endurance racing. He drove an Aston Martin DBR9 in the GT1 class of the 2006 American Le Mans Series before being signed as an official Peugeot Sport works driver for the 2007 Le Mans Series, campaigning the new 908 HDi FAP diesel Le Mans Prototype.
He and Pedro Lamy won the 2007 Le Mans Series by claiming three race victories. At the 2007 24 Hours of Le Mans, Sarrazin took pole position and finished second alongside Lamy and Sébastien Bourdais. He finished second at Le Mans again in 2009. In 2010 he won the Le Mans Series championship for a second time.
Following Peugeot's withdrawal from endurance racing, Sarrazin signed with Starworks Motorsport for the 2012 FIA World Endurance Championship. He also drove the Toyota TS030 Hybrid at Le Mans that year as a late replacement after Hiroaki Ishiura withdrew on medical grounds. In 2013 he joined Toyota Racing full-time, driving the TS030. He helped the team finish second at Le Mans and scored his first win with Toyota in Bahrain. He won the 2008 24 Hours of Spa in a Vitaphone Racing Team Maserati MC12.
In 2004 Sarrazin converted to rallying, competing in two World Rally Championship events and recording a best result of fourth. He was signed alongside young Australian Chris Atkinson as part of Subaru's second car, supporting defending world champion Petter Solberg. He finished third overall on the 2009 Monte Carlo rally and fourth on the Monte Carlo round of the 2010 Intercontinental Rally Challenge. In November 2014 he took his first international rally victory in the Tour de Corse, the final round of the 2014 European Rally Championship.
Sarrazin entered the inaugural season of Formula E in 2014, signing with Venturi Grand Prix. He finished the first ever Formula E race, the 2014 Beijing ePrix, in ninth place.
In 2021 Sarrazin participated in the inaugural season of the Extreme E all-electric off-road series with Veloce Racing. During the Island X-Prix he suffered a severe rollover accident but emerged uninjured, attending the medical centre as a precaution.
