Moffitt was born in Grimes, Iowa, the youngest of three children to Dick and Becky Moffitt (née McDowell). He began his racing career at the age of ten in kart racing competition. Moffitt was homeschooled during his junior and senior years of high school.
Moffitt won the Harris Clash in the IMCA Sport Modified division in 2007. In 2009, he debuted in the K&N Pro Series East – then known as the Camping World East Series – for a team owned by Andy Santerre, winning the pole in his first race at Greenville-Pickens Speedway. He became the youngest driver ever to do so in the series. Moffitt scored two wins that season, finishing third in series points. His first win came at South Boston Speedway in May, making him the youngest driver ever to win in the series and in any NASCAR touring series; this record stood until Bubba Wallace eclipsed it in March 2010.
In 2010, Moffitt moved to Joe Gibbs Racing, scoring two wins and finishing second in K&N Pro Series East points. He continued his development as a driver for Michael Waltrip Racing in 2011, winning three times and finishing third in the K&N Pro Series East standings.
In 2012, Moffitt joined Hattori Racing Enterprises, winning races at Richmond International Raceway and Central Pennsylvania Speedway. He led the series points after nine events, but a lack of sponsorship funding meant the team associated with Michael Waltrip Racing for the final races, starting at New Hampshire. Moffitt nearly won the 2012 K&N Pro Series East Championship, but made contact with Tyler Reddick on the final lap, losing the championship to Kyle Larson.
Moffitt won his first NASCAR Camping World Truck Series race in 2016 at Michigan International Speedway, passing William Byron and Timothy Peters on the final lap. He continued to run in the K&N Pro Series East in 2013, scoring five top-five finishes and ten top-tens in fourteen races, finishing second in championship points.
The 2018 season marked Moffitt’s championship year in the NASCAR Camping World Truck Series. He won races at Atlanta, Iowa, Chicagoland, Michigan (making a last-lap pass on Johnny Sauter), and Phoenix, winning his fifth race of the season and locking himself into the Championship 4. Moffitt then won at Homestead–Miami Speedway, claiming his first championship.
In 2014, Moffitt made his Sprint Cup Series debut with the MWR-affiliated Identity Ventures Racing in the FedEx 400. In 2015, Moffitt drove the No. 55 at Atlanta because MWR's regular driver, Brian Vickers, had off-season surgery to repair a patch placed over a hole in his heart, finishing eighth for his first-ever Sprint Cup top ten. He continued to substitute for Vickers at Fontana, Martinsville, and Texas as Vickers dealt with blood clots. Moffitt also drove for Front Row Motorsports at Las Vegas and Phoenix, filling in for David Ragan while Ragan drove for Joe Gibbs Racing with Kyle Busch injured.
Moffitt remains an active driver as of October 29, 2024, competing part-time in the NASCAR Craftsman Truck Series and NASCAR Xfinity Series. In March 2020, he broke his femur in a motocross accident but did not miss any Truck races due to the COVID-19 pandemic.
In 2023, Moffitt ran full-time with AM Racing in the NASCAR Xfinity Series, and also ran one Truck race, winning at Talladega in the Front Row Motorsports No. 34 Ford. In 2024, Moffitt ran part-time in the NASCAR Craftsman Truck Series with Tricon Garage and the NASCAR Xfinity Series with Joe Gibbs Racing. He also drove for Hettinger Racing in the final two Truck Series races after they purchased the assets of Bret Holmes Racing.
In 2019, Moffitt was declared the winner of the NASCAR Camping World Truck Series race at Iowa Speedway after Ross Chastain’s truck failed post-race inspection. This made Moffitt the first winner to achieve a win like this in any of the top-three series since Dale Jarrett was disqualified from a Busch Series victory in 1995.
